A favorite Mexican dish with a low carb overhaul, using ready-made tomatillo sauce. Perfect for meal prep, make ahead, or potlucks. Suitable for Atkins, Keto, LCHF, Low Carb, Diabetic, Low Glycemic, Gluten Free, Grain Free, Sugar Free, Nut Free, Coconut Free, Low Potassium. For Paleo or dairy-free, use a dairy-free sour cream substitute. May be compatible with the CKD/Renal diet, depending on your sodium restrictions.

Ingredients
- 32 ounces, liquid Victoria Thick ‘n Chnky Salsa Verde (medium), or other tomato salsa
- ½ cups Daisy Sour Cream (full fat)
- ¼ cups Cilantro, chopped
- ½ teaspoon garlic powder
- ten Aunt Rocky’s All Purpose Tortillas (see my TK recipe box)
- 20 ounces, weight Roast chicken Light and dark meat, skinless, shredded
- Salt and pepper to taste
- 1 cup Kraft Mexican 4 Cheese Shredded Blend, Divided Use
Preparation
Preheat the oven to 350ºF. Spray a 9×13 glass baking dish with cooking spray. If the wraps are cold, place them in the microwave for a few seconds at a time to bring them to room temperature.
Place the tomatillo sauce, sour cream, cilantro, and garlic powder in a blender and blend until smooth. Spread about 1/2 cup of the sauce mixture in the bottom of the baking dish.
On a dinner-size plate, place a tortilla. Put 2 ounces of chicken in the center of the tortilla. Sprinkle with a little salt and pepper and pour 1 tablespoon of sauce over the chicken. Sprinkle with a small amount of cheese. Roll up and place in baking dish seam side down. Repeat until you have built all 10 enchiladas.
Spoon remaining sauce over top of enchiladas, spreading to get sauce on each. Sprinkle with remaining cheese.
Bake 30 minutes or until cheese begins to brown. Serve immediately.
Makes 10 enchiladas. Leftovers can be frozen or stored in the fridge for up to a week.
Remarks:
• To boost macros for Keto/LCHF, serve with a high-fat side such as sliced avocado.
• If you are substituting another low carb wrap for Aunt Rocky’s all purpose wraps, be sure to count the carbs for those wraps. Aunt Rocky’s tortillas contain 1 net carb each.
