Three large meal portions, or take out for a picnic or barbecue to share. Either way, people are going to love this fresh asparagus salad! Suitable for Atkins, keto, chf, low carb, diabetic, low glycemic, gluten free, dairy free (cheese free).

Ingredients
- 12 ounces, weight Asparagus, cut and steamed
- 16 whole Kalamata olives, halved
- 12 pieces Cara Mia Grilled Artichoke Hearts, halved
- 3 ounces, weight Thinly sliced dry salami (I use Safeway Select), chopped
- 3 ounces, weight Mozzarella cheese in a string, sliced into rounds
- 3 whole Plain Sweet Cherub tomatoes, quartered
- 3 tablespoons Wish Bone Ristorante Italiano Signature Italian Dressing (see note)
- 1 tbsp Italian white wine vinegar (or other carb-free vinegar)
- ½ teaspoon Coarsely ground black pepper, or more to taste
Preparation
In a large casserole dish with a lid, place the chopped asparagus pieces. Steam in the microwave for 3 minutes. Drain well.
Add all the remaining ingredients and mix. Divide onto serving plates. Garnish as desired.
Remarks:
1. If you don’t have the Wishbone dressing, use any other dressing which is high in fat and very low in carbohydrates.
2. I use very thin asparagus tips for this salad to avoid woody or overly fibrous bits.
3. This salad has no wilting greens, so it can be made ahead. Ideal for work or school lunches.
