Savory noodle soup packed with Asian flavors with vermicelli rice noodles, all gluten and dairy free ingredients.

- 1 tbsp Olive oil
- 1 teaspoon Curry powder
- 1 teaspoon garam masala
- ¼ teaspoons Chili flakes
- ½ teaspoon Turmeric
- 2 cloves minced garlic
- 1 whole Onion, diced
- 1 whole Red bell pepper, thinly sliced
- 2 whole Chicken breasts, cooked and cut into cubes
- 1 tbsp Lime juice
- 1 cup, 11 tbsp, 2-½ pinches Coconut milk
- 1 cup, 11 tbsp, 2-½ pinches chicken stock
- 5-⅓ ounces, weight Rice noodles with vermicelli
Preparation
Place the olive oil in a large saucepan over medium heat. Add curry powder, garam masala, chili flakes, turmeric and garlic. Cook for a few minutes. Stir in onion and bell pepper and sauté for 5 minutes.
Add chicken, lime juice, coconut milk and chicken broth. Bring to a boil. Add the noodles and simmer for 3 minutes. Season as desired.
Divide into bowls and serve.
