Applesauce Cookies are light, chewy and sweet with a light spice and apple flavor. Perfect for tailgating, apple picking, or any fall outing!

Ingredients
- FOR THE COOKIES:
- 2-¼ cups Unbleached all-purpose flour
- 1 teaspoon Cinnamon
- ¼ teaspoons Allspice
- ¼ teaspoons Freshly grated nutmeg
- ½ teaspoon Baking soda
- ¼ teaspoons baking powder
- ¼ teaspoons Kosher salt
- ½ cups Salted Butter, Cut In Pieces
- 1 cup Packaged light brown sugar
- 1 Egg
- ½ cups Applesauce
- ½ teaspoon Vanilla bean paste or extract
- FOR THE GLAZE:
- 1 cup Granulated sugar
- 1 tbsp Milk
- ½ teaspoon Vanilla bean paste or extract
Preparation
Preheat the oven to 350ºF. Line cookie sheets with parchment paper.
Whisk together flour, cinnamon, allspice, nutmeg, baking soda, baking powder and salt. Put aside.
butter and sugar until light and fluffy. Stir in egg, applesauce and vanilla bean paste until blended. Add flour mixture and stir over low heat until combined. Scrape the bottom and sides of the bowl.
Spoon onto prepared sheets using a 2 tbsp cookie scoop. Bake for 12 minutes or until top springs back when lightly pressed. Remove to a wire cooling rack.
Once completely cooled, prepare the frosting. Whisk together powdered sugar, milk and vanilla bean paste. The mixture will feel thick at first, then it will loosen up. Pour or pipe over cooled cookies.
