Once in a while, I like to take a traditional sweet recipe and make it my own. I tried the pancakes and everyone loved it!

Ingredients
- 4 Apples, grated
- 4 tablespoons White sugar
- 2 teaspoons Cinnamon powder
- 2 Eggs
- 1 pinch Salt
- 250 milliliters Milk
- 200 grams Flour
- ½ teaspoon baking powder
- FOR THE CREAM:
- 250 grams mascarpone
- 100 milliliters Heavy cream
- 2 tablespoons Granulated sugar
- 1 tbsp Chocolate sauce, to garnish
Preparation
In a saucepan, add the apples, white sugar and cinnamon and put over medium heat. Simmer 20 minutes, stirring often. When the apples are done, transfer to a bowl and blend on high speed until creamy.
Separately, whisk the eggs, salt, milk and gradually add the flour, mixing after each batch. Add baking powder and apple mixture and mix. In a skillet over low heat, sauté the pancakes until cooked.
For the cream, mix the mascarpone with the powdered sugar and heavy cream. Assemble the pancakes into small cakes, and decorate with chocolate as you wish.
