Flourless, guilt-free pancakes full of fiber and protein!

Ingredients
- 1 whole Apple (crispy, soft apples are best)
- 1 cup Oat bran
- ⅓ cups Old fashioned oats
- 1 teaspoon baking powder
- 1 teaspoon Ground cinnamon
- 2 whole Eggs
- ½ cups Unsweetened almond milk, plus more to reach your desired consistency
- 2 tablespoons Dear
- 2 tablespoons Coconut oil, melted
Preparation
Peel and core the apple. (Any sweet, crisp apple will do for this recipe, such as a Gala, Fuji, or Honeycrisp.) Cut the apple into thin, even pieces.
In a large mixing bowl, combine the chopped apple, oat bran, old fashioned oats, baking powder, ground cinnamon, eggs, unsweetened almond milk, honey and coconut oil. Mix well. (The mixture should be thick, but smooth and runny. If needed, you can add a little more almond milk to soften.
Heat a griddle or skillet over medium-high heat. Once the pan is hot, pour ¼ cup batter over the hot pan. (No need to grease the pan as the batter contains coconut oil which will prevent it from sticking.) Cook the crepe for 3-4 minutes, then flip and cook an additional 3-4 minutes, or until let it be golden. Repeat with the rest of the dough.
To serve, you can drizzle with pure maple syrup or honey.
