If cooked onions are good, crispy caramelized onion patties are even better! And I’m here to tell you that these onion patties are completely addictive. Serve them piping hot with cold sour cream on the side for dipping, then sit back and wait for the oohs and aahs.

- 6 tablespoons All purpose flour
- 1-½ tsp Granulated sugar
- 1-½ tsp cornmeal
- 1 teaspoon baking powder
- ¾ teaspoons Kosher salt
- ½ teaspoon Ground black pepper
- 6 tablespoons Milk
- 1-¼ cup Finely chopped onion
- Peanut or canola oil for frying
- Sour cream and chopped chives, for garnish (optional)
Preparation
In a medium bowl, combine flour, sugar, cornmeal, baking powder, salt and pepper. Add milk and stir until no lumps remain. Stir in the onions.
In a 10 inch cast iron or nonstick skillet over medium heat, heat about 1/2 inch of oil until the tip of a wooden spoon bubbles when placed in the oil. Fry 1/4 cup portions, 3 at a time, for several minutes until golden on the first side, then gently flip and fry until the second side is brown.
Remove from skillet and drain on paper towel for 1 minute, then transfer to a cooling rack to keep crispy. Repeat until the rest of the dough is cooked. Serve immediately with sour cream and chopped chives.
