- ½ cups Non-Dairy Butter Or Coconut Oil
- 1 Onion, chopped
- 2 cloves minced garlic
- 2 Chopped carrots
- 4 cups Broccoli, chopped
- 1 teaspoon Salt
- 1 teaspoon Pepper
- ½ teaspoon Paprika
- 1 teaspoon Mustard powder
- 1 teaspoon Hot sauce
- 1-½ cup Dairy-free milk
- 4 cups Chicken broth or water
- ¼ cups Cornstarch
- ½ cups Cold water
- 2 cups Dairy-free shredded cheddar cheese
Heat the oil or butter in a large saucepan. Once melted, add the onions, garlic and carrots and cook until tender, about 5 minutes.
Add the broccoli. Cook for another 5 minutes, then season with salt, pepper, paprika, mustard and hot sauce. Add milk and broth. Simmer over medium heat for 10 minutes.
Mix cornstarch and cold water. Pour into saucepan and whisk until smooth. Let cook to thicken.
Add cheese and cook until cheese is melted. Adjust seasoning. Serve.
