A quick and easy meal for one person!
- 1 whole Yam
- 1 tbsp Olive oil
- ½ whole Medium zucchini, cut into small pieces
- 1 tbsp green peppers
- ⅓ cups Chickpeas
- 1 cup spinach, chopped
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- Salt and pepper to taste
- ½ avocado, sliced
Wash the sweet potato and pat it dry with a paper towel. Pierce it all over with a fork, wrap it in a paper towel used to dry it, and microwave it for 5 minutes.
While the potatoes cook, add the olive oil to a skillet over medium heat. Add zucchini and green peppers. Sauté for about 5 minutes or until the zucchini is tender. Add the chickpeas and spinach, chili powder, garlic powder and a pinch of salt and pepper. Sauté another 2 to 3 minutes. Taste and add more salt and pepper if needed.
Take the potato out of the microwave. Divide and crush. Add the mixture of vegetables and chickpeas. Garnish with avocado. Enjoy!
